As a wedding planner, people typically think wedding cake is one of the big perks of the job. However, getting to sample a delicious spread of appetizers, salads, and main courses is really where it’s at for me. On Monday, I had the opportunity to accompany one of our couples to their menu tasting at Lakeway Resort and Spa. While everything was equally tasty, the couple had a pretty easy time picking their favorites, and I was happy to agree with their choices.
Appetizers pictured on the left include Curried Chicken Salad on Belgian Endive (top row), Mini Grilled Lamb Chop with Mint Jus (middle left), Mini BBQ Beef Slider on a Challah Bun (middle right) and Seared Tuna with Avocado Crema and Micro Basil (bottom row). Two other seafood options, pictured on the right, were Mini Jumbo Lump Crab Cake on Jalapeño Aioli (top) and Blue Crab and Papaya Salad on a Spoon (bottom).
In order to make room for the salad choice, some of us had a second “taste” and the appetizers quickly vanished from the table. The two salad choices were Baby Arugula Salad with Candied Bacon and Walnuts, Gorgonzola, Cherry Tomatoes, and Champagne Vinaigrette (left) and Baby Greens, Crisp Vegetables, Marinated Feta, and Lemon Thyme Vinaigrette (right).
Following the salad selection, it was time to get to business with the entrées. It was not going to be an easy choice with such an amazing offering of Roasted Salmon and Chicken topped with a Cucumber Caper Relish, with a side of roasted fingerling potatoes and asparagus (left) paired against a beautiful Filet of Beef, topped with a Bacon and Tomato Ragu and sides of green beans and potatoes au gratin (right). Because both dishes were so tasty, the couple was at a stalemate and decided to let their guests make the difficult decision for themselves.
